BABA GANOUSH

INGREDIENTS
- 3 eggplants
- 1-2 tbsp olive oil
- 2 tbsp tahini
- 1/2 lemon juice
- 1 garlic clove, grated
- salt, pepper
Topping:
- sesame seeds
- salt flakes
- olive oil
TOPPING
- sesame
- olive oil
METHOD
1. Turn on the oven on at least 200°C
2. Pour a tiny bit of oil on the eggplant and give it a little rub
3. Place on a baking tray and bake for around 45 minutes
4. Once cooled down remove the skin
5. Put into a bowl and mash the soft inside of the eggplant with a fork
5. Add all other ingredients and mix well
6. Top up with sesame seeds, salt and oil and enjoy with some bread or on a wrap
