BERRY MOUSSE

INGREDIENTS
- 1 1/2 cups berries
- 400 g silk tofu
- 1 tbsp sweetener
TOPPING
- more berries
- coconut flakes
METHOD
1. Blend together all berries, sweetener and tofu
2. Fill into little glasses and chill for 1-2 hours
3. Top up with some more fresh berries and some shredded coconut
