BLOODY BLONDIES

This is the result of a brainstorm what to do with all the beetroot at home. After a beautiful beetroot latte, a raw beet salad and a smoothie, we made these bloody blondies for halloween! They are super healthy, protein-rich and gluten-free. Sweet from the chocolate, but with a earthy flavour from the beetroot - just amazing!

INGREDIENTS
- 250g black beans, cooked and drained
- 1/2 cooked beetroot
- 1 chia egg
- 1-2 tbsp sweetener
- 50g oat flour
- 1/2 tsp baking powder
- pinch of sea salt
- 1/2 tsp vanila extract
- 2 tbsp neutral oil
- 50g choco chips
TOPPINGS
- more chocolate chips
METHOD
1. Preheat the oven to 180°C
2. In a food processor mix beetroot, black bleans, vanilla, sweetener and oil
3. Fill into a bowl and add baking powder, oat flour, choco chips, chia egg and salt and mix with a spoon
4. Fill into a lined brownie mold and decorate with more choco chips
5. Bake for 30 minutes and let cool down slightly before cutting (it should be moist and soft)
