BREAD SALAD

Even a failed, non-fluffy bread is too good to be thrown away! We just literally saw our last failed bread up into slices, covered them with olive oil and toasted them in a toaster. Super quick and easy. The result were wonderfully crunchy bread slices that we cut in cubes and used on our fresh summer salad!

INGREDIENTS
- 2 handful lettuce
- 1 peach, sliced
- 4 dates, pitted and chopped
- 2 slices of old bread
- vegan feta, in cubes
DRESSING
- 2 tbsp olive oil
- 1 tbsp Balsamico
- 1 tsp mustard
- 1 tsp berry jam
- pinch of salt
METHOD
1. Cover the bread in some olive oil and toast it in a toaster, pan or in the oven until crunchy
2. Cut bread slices into cubes and let cool down
3. Prepare the salad in a bowl and top up with the crunchy bread
4. Prepare the dressing and mix with salad
