THAI BASIL CURRY

INGREDIENTS

- 3 cloves of garlic, minced

- 1 cm ginger, grated

- neutral oil for frying

- 200 g tofu or chicken substitute

- 400 ml thick coconut milk

- 1 tbsp red curry paste

- 1 tbsp peanut butter

- 1 tbsp tamari sauce

- lime zest of half a lime

- a handful thai basil, roughly chopped


TOPPING

- chili 

- more thai basil

- sesame seeds

METHOD

1. Fry the garlic and ginger in some oil until fragrant

2. Add the curry paste and fry for another minute

3. Add the coconut milk and peanut butter and simmer for some minutes

4. Add the tofu or chicken substitute (either fried a little before or raw) and the lime zest and bring to boil

5. Add the tamari sauce and simmer until it thickens a little more

6. Remove from heat and stir in the basil

7. Serve with rice and top up with sesame seeds and more chili
