HEALTHY JOPPIE SAUS

INGREDIENTS

- 150g white beans, cooked and with some of the liquid (use mayonnaise for the original recipe)

- 2 tbsp soy yogurt

- 5 cornichons (small pickles)

- 1/2 onion

- 1 tbsp ketchup

- 1 tbsp sweetener

- 1 tsp curry powder

- 1 tbsp white vinegar

- 1 tsp dijon mustard

- 1/2 tsp salt

EAT WITH

- homemade fries

- on a burger

METHOD

1. Mince the onion and cornichons and fry in neutral oil until soft

2. Add curry powder and vinegar and simmer for some more minutes

3. Let cool down slightly

4. Blend all ingredients including the onion&cornichon mix with a hand blender until smooth

5. Let cool down in the fridge for some hours or overnight and eat on fries, wedges or just potatoes
