OMA´S SPÄTZLE

INGREDIENTS

- 200g pasta flour or 405 flour

- 200g soy yogurt

- 2 tbsp starch

- around 9 tbsp water

- some salt

- handful grated vegan cheese

TOPPING

- chives

METHOD

1. Mix all ingredients together in a bowl (besides the cheese)

2. Bring water to boil in a big pot with some salt (the pot should be filled up quite high)

3. Take a big spoon of dough and spread it thinly on a wood board

4. Scratch off Spätzle with a straight knife (put into the hot water before) and throw directly into the hot water. It is the easiest if your wood board hits or almost hits the surface of the water

5. Once Spätzle pop up throw into a bowl with cold water or fry directly in a preheated pan with some oil

6. Fry in a pan, add some salt and a handful of cheese

7. Top us with some chopped chives and enjoy when still hot
