KHAO PAD SAPPAROD
This dish makes us fly back in time when we were living in Thailand. This is one of the most easy dishes and always turns our delicious. We love to serve it in the empty pineapple shell and it may even taste a tiny bit better then. We usually make this dish when we have left over rice from the day before. Pineapples are part of our kitchen decoration and therefore always available in our casa. With these two main ingredients you will be able to create a tasty and healthy dish!

INGREDIENTS
- 2 cups cooked rice, best from the day before
- 1/2 small pineapple, cut in cubes
- 150g silk tofu, mashed (or normal tofu)
- 1 onion, chopped
- 1-2 garlic glove, minced
- handful cashews
- handful raisins
- 1 tsp ginger powder, or fresh
- 1 tbsp curry powder
- 3 tbsp tamari sauce
- olive oil for frying
TOPPING
- chives
METHOD
1. Fry onion and garlic for 2-3 minutes
2. Add cashews and tofu and fry for 2 more minutes
3. Add all other ingredients and stir-fry for 2 more minutes
4. If you are fancy serve dish in the pineapple shell
