MANGO STICKY TOFU

INGREDIENTS
- 400g tofu, in big chunks, dried well
- 2 tbsp soy sauce
- 2 tbsp starch
*pro tip: freeze and unfreeze the tofu first
For the sauce:
- 1 mango, in chunks
- juice of 1/2 lime
- 1 tbsp soy sauce
- 1 tsp starch
- 1/2 tsp chili flakes
To fry:
- 3 garlic cloves, minced
- 2 cm ginger, grated
EAT WITH
- rice
- chili flakes
- lime
- spring onion
METHOD
1. Mix the tofu in a bowl with the starch and the soy sauce
2. Fry in some oil until crispy
3. Blend all ingredients for the sauce until smooth
3. Fry garlic and ginger until fragrant, add tofu and poor over sauce
4. Keep frying a little until sauce thickens
5. Serve with some white rice, chili flakes and spring onion
