ONE POT CURRY PASTA

INGREDIENTS

- 300 g pasta

- 3 cloves of garlic, minced

- handful mushrooms, sliced

- 2 tbsp olive oil

- 600 ml veggie broth

- 400 ml coconut milk (1 can)

- 1 tbsp curry powder

- some salt

TOPPING

-chives

METHOD

1. Fry the mushrooms in oil for 1 minute

2. Add garlic and the curry powder and fry another minute

3. Add the coconut milk, the broth and salt as well as the pasta and bring to boil

4. Boil until pasta is al dente and the sauce thickened a bit (around 15 minutes depending on the pasta)
