ONE POT PUMPKIN PASTA

INGREDIENTS

-300g pasta (one that is done in around 10-12 minutes)

- 250g pumpkin

- 600ml veggie broth

- 1 onion

- 2 cloves of garlic

- 2 tbsp nutritional yeast

- 1 tsp salt

- some pepper 

- pinch of nutmeg

TOPPINGS

- chives

- fried tempe of tofu

METHOD

1. Chop the onion, garlic and pumpkin in small pieces

2. Heat up oil in a pot and fry the onion, garlic and pumpkin until soft

3. Add salt, nutritional yeast and broth and blend with a hand blender

4. Add the pasta and bring to boil

5. Cook until liquid turns into a creamy sauce, around 10-15 minutes

6. Add nutmeg and pepper and top up with chives and fried tempe or tofu

7. Enjoy right away
