PINK WATERMELON SALAD

INGREDIENTS

- a big chunk of watermelon

- 150 g beluga lentils, soaked overnight

- 200 g tofu feta

SAUCE

- juice of half a lemon

- olive oil

- salt

- pepper

- some fresh mint

METHOD

1. Cook the lentils until soft

2. Cut the watermelon in cubes

3. Mix all the ingredients for the sauce on a bowl

4. Build the salad and top up with some mint leaves
