STIR FRY NOODLES

A dish for lazy people or people that need to prepare a healthy and rich dish without much time. These are our favourite stir fry noodles with vegetables and crunchy tempeh!

INGREDIENTS
- 200g rice noodles
- some chopped veggies: bimi, bell pepper, onion, carrot, mushroom…
- 200g tempeh or tofu, in stripes
Sauce:
- 50ml water
- 3 tbsp soy sauce
- 1 tbsp sweetener
- 1 tbsp rice vinegar
- 1 tbsp shredded ginger
- 1 tsp sriracha (optional🔥) or tomato paste
- 1 tsp corn starch (or any other)
- 1 tsp sesame oil (optional)
TOPPINGS
- chives
- spring onion
- sesame seeds
METHOD
1. Cook noodles following instructions and rinse them in cold water to cool down
2. Mix all ingredients for the sauce in a jar
3. Fry tempeh in a bit of oil and set aside
4. Fry the onion until soft and then add the rest of veggie’s. Stir fry for another 5 minutes
5. Add tempeh, noodles and sauce, mix and combine well and take away from the heat
6. Serve with some chives or spring onion
