TOFU TIKKA MASALA
Hannas comfort food! Korma, Daal and now Tikka Masala. It's just so good and creamy and I could eat it for breakfast, lunch, dinner and midnight snack! This dish is full of spices that feel good and taste good. It is an absolute flavor explosion in the mouth. We made some rice with fresh dill to go with it. But also some naan bread or other flat bread are great to eat with this tofu tikka masala dish.

INGREDIENTS
- 450g tofu, big dices
- 1 onion
- 3 garlic cloves
- 3 tomatoes, chopped
- 70g tomato paste
- 100ml water
- some olive oil
- 1 tbsp ginger, grated
- 1/4 tsp cumin
- 1 tsp garam masala
- 1/2 tsp coriander
- 1/2 tsp turmeric
- 120g yogurt
- salt
MARINADE
- 100g soy yogurt
- 2 tsp garam masala
- 2 tsp paprika powder
- 1/4 tsp black pepper
- some salt
Optional: 1/2 tsp cayenne
METHOD
1. Add all the ingredients for the marinade in a bowl and mix
2. Add the tofu, cover all sides with the marinade and let sit for 1h or overnight
3. Fry tofu in a pan or bake in the oven on 200 °C until brownish
4. Heat up oil in a pan and fry onion and garlic
5. Add all spices and fry until fragrant
6. Add tomatoes and tomato paste and cook until tomatoes fall apart
7. Add water and cook on low heat for 15-20 minutes or until sauce thickens
8. Add tofu and cover in the sauce
