ZUCCHINI STICKS

INGREDIENTS

- 1 zucchini

- salt

- 1 cup chickpea flour

- 3/4 cup soy milk

- 1/3 cup starch

- breadcrumbs/ cornflakes

- 1/2 tsp pepper

- 1/2 tsp garlic powder


EAT WITH

- BBQ sauce

- Ketchup sauce

- Mayonnaise

METHOD

1. Preheat the oven to 200Β°C and prepare a lined baking tray

2. Cut the zucchini in fingers

3. If you want sprinkle some salt on top

4. In a bowl mix chickpea flour, starch, milk, some salt and pepper and whisk well

5. Prepare a big plate with lots of breadcrumbs

6. Dip each zucchini stick into the batter and cover with bread crumbs

7. Line up on a tray and bake until golden brown, around 25 minutes
